A quick salad

Finally at the age of 54 I wished for and received a food processor. How on earth have I survived without one all this time? It’s brilliant. Among other things, I can now make myself a nicely chopped salad in no more than 5 minutes (and that included cleaning the darn thing).

So I thought I should share this since it’s the quickest lunch I can make in the morning. This is a perfect salad for anyone who like me never seems to have enough time before you rush out the door to get to work.
So put through your processor and I use the rough shredder only for this to save time.

INGREDIENTS:

1/2 carrot
1/2 zucchini
Small piece of beetroot
Small piece of red cabbage
Small piece of white cabbage
Small piece of red capsicum

METHOD:

Pour into a mixing bowl, then add with scissors which is very quick
a bit of fresh coriander
a stalk of shallots
a handful of black sesame seeds

If you still have a minute you could always add cucumber (I apparently did here)

DRESSING:

Then add for dressing
1 Tsp Apple Cider Vinegar
1 Tsp Balsamic Vinegar
2 Tblsp Cold Pressed Olive Oil
Salt & Pepper

Mix and put in container for later or just munch it up straight away. It’s good for you and taste yummy!
